Macadamia Nut Crusted Island Fish Recipe

Preparation of Fish

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Fish

    In a bowl, mix chopped macadamia nuts, panko breadcrumbs, melted butter, salt, and black pepper.

    Coat the Fish

    Place the fish fillets on a baking sheet lined with parchment paper. Squeeze lemon juice over them, then press the macadamia mixture onto the top of each fillet.

    Bake the Fish

    Bake for about 15-20 minutes, or until the fish is cooked through and the crust is golden.

Preparation of Potatoes

    Boil the Potatoes

    In a pot, boil salted water and add the red bliss potatoes. Cook until tender, about 15-20 minutes.

    Sauté the Potatoes

    Drain the potatoes and let them cool slightly. Cut into halves or quarters, then in a skillet, heat olive oil and sauté the garlic until fragrant.

    Combine and Season

    Add the potatoes to the skillet and toss until they are golden. Season with salt and garnish with fresh parsley.

Preparation of Lobster Nectar

    Sauté Shallots

    In a saucepan, melt butter over medium heat and sauté the chopped shallots until translucent.

    Make Lobster Nectar

    Add the Kona Maine lobster stock and bring to a simmer. Stir in the heavy cream and season with salt and black pepper. Simmer until slightly thickened.
