Prepare the Pork Belly
Preheat your oven to 400°F (200°C). Season the pork belly with salt and pepper. Place it in a roasting pan and roast for 25-30 minutes until crispy. Remove from the oven and let it rest before slicing.

Cook the Orzo
In a large pot, boil salted water. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, stirring constantly until the sauce thickens. Add the cheddar and parmesan cheese, and continue stirring until melted and smooth. Season with salt and black pepper.

Combine Pasta and Sauce
Add the cooked orzo to the cheese sauce and stir until well combined. Drizzle in the truffle oil and mix thoroughly.

Assemble and Bake
Transfer the mac and cheese mixture to a baking dish. Top with bread crumbs for a crispy topping. Bake in the oven for about 15-20 minutes until golden brown.

Slice the crispy pork belly and serve it alongside the truffle mac and cheese. Garnish with parsley.
