Pickling the Tomatoes

    Prepare the Pickling Solution

    In a medium saucepan, combine white vinegar, water, sugar, salt, black peppercorns, garlic cloves, and bay leaves. Bring to a boil, stirring until sugar dissolves.

    Pickle the Tomatoes

    Place the Sugarland tomatoes in a clean jar. Pour the hot pickling solution over the tomatoes, ensuring they are fully submerged. Seal the jar and let it cool to room temperature, then refrigerate for at least 2 hours (or overnight for best flavor).

Preparing the Mushroom Stack

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add the fresh mushrooms, season with salt and black pepper, and sauté until they are golden brown and tender, about 5-7 minutes.

    Prepare the Avocado

    While the mushrooms are cooking, slice the avocado in half, remove the pit, and scoop out the flesh. Cut it into slices or cubes.
