Prepare the Potatoes
Wash and peel the Yukon Gold potatoes. Cut them into thin strips resembling fries.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Season the Potatoes
Drain and pat the potatoes dry. In a large bowl, toss the fries with olive oil, sea salt, black pepper, paprika, and garlic powder until evenly coated.

Bake the Fries
Spread the seasoned fries in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Prepare the Cheese
While the fries are baking, crumble the Big Island Boursin Goat Feta Cheese into a bowl and set aside.

Once the fries are done, remove them from the oven and transfer them to a serving platter. Top with the crumbled Boursin Goat Feta Cheese.
