Cooking Rice

    Prepare the Rice

    Rinse the white rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Making Gravy

    Cook the Gravy

    In a pan over medium heat, add a splash of sesame oil and sauté the diced onions until translucent. Add the sliced crimini mushrooms and cook until they are soft. In a bowl, mix soy sauce, brown sugar, cornstarch, and 1 cup of water. Pour this mixture into the pan, stirring continuously until the gravy thickens. Remove from heat.

Frying Eggs

    Cook the Eggs

    In a frying pan, melt butter over medium heat. Crack the eggs into the pan and season with salt and pepper. Cook until the whites are set but the yolks are still runny (sunny side up).

Assembly

    Assemble the Loco Moco

    In a bowl, place a serving of steamed white rice. Top with the mushroom and onion teriyaki gravy, and finally, place the sunny side egg on top. Serve immediately.
