Preparation

    Prepare the Confit Bacon

    In a saucepan, heat the olive oil over low heat. Add the bacon strips and cook slowly until crispy, about 1 hour. Remove and let drain on paper towels.

    Make the Buttery Croutons

    Preheat the oven to 375°F (190°C). Toss the cubed French bread with melted butter. Spread on a baking sheet and bake for 10-15 minutes until golden and crunchy.

    Cook the Blackened Ahi

    Rub the Ahi tuna steaks with Cajun seasoning. Heat olive oil in a skillet over high heat. Sear the tuna for 1-2 minutes on each side until blackened but still rare in the center. Remove from heat and let rest.

    Prepare the Dressing

    In a small bowl, whisk together lemon juice, Dijon mustard, honey, and olive oil. Season with salt and pepper to taste.

    Assemble the Salad

    In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. Drizzle with dressing and toss gently. Top with blackened Ahi slices, confit bacon, and buttery croutons.
