Slow Cook the Pork
Rub the pork shoulder with sea salt, black pepper, and liquid smoke. Place in a slow cooker and cook on low for 8 hours until tender. Shred the meat with forks and set aside.

Prepare Crispy Onions
Slice the onion thinly and soak in buttermilk for 30 minutes. In another bowl, mix flour, cornstarch, and salt. Heat vegetable oil in a pan. Dredge the soaked onions in the flour mixture and fry until golden brown. Drain on paper towels.
Housemade Slaw

Make the Slaw
In a large bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and refrigerate until ready to serve.
Pineapple Sweet & Sour Sauce

Prepare the Sauce
In a saucepan, combine pineapple juice, brown sugar, soy sauce, cornstarch, and water. Bring to a simmer over medium heat, stirring until thickened. Remove from heat.

Assemble the Sandwich
Toast the burger buns. On each bun, layer shredded Kalua pork, housemade slaw, and crispy onions. Drizzle with pineapple sweet & sour sauce. Serve immediately.
