    Prepare Ingredients

    Clean and slice all mushrooms. Chop the bacon into small pieces. Mince the garlic, and slice the scallions and shiso leaves.

    Cook Spaghetti

    In a large pot of salted boiling water, cook spaghetti according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.

    Cook Bacon

    In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.

    Sauté Vegetables

    In the same skillet with bacon fat, add minced garlic and sauté for about 1 minute until fragrant. Then add the sliced mushrooms and shishito peppers, cooking until softened, about 5-7 minutes.

    Combine Ingredients

    Add the cooked spaghetti to the skillet along with the crispy bacon. Pour in the dashi soy sauce and toss everything together. If the mixture seems dry, add a little reserved pasta water.

    Garnish and Serve

    Remove from heat and stir in the sliced scallions and shiso leaves. Serve hot, garnished with additional shiso if desired.
