Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice and let it cool to room temperature.

Prepare the Roll
Lay a sheet of nori on a bamboo sushi mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch from the top edge.

Add Fillings
Place 2 slices of Hamachi and a few pickled jalapenos in a line across the center of the rice. Sprinkle a small amount of bubu arare on top.

Roll the Sushi
Using the sushi mat, carefully roll the nori away from you, pressing gently to form a tight roll. Seal the edge with a little water.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces, cleaning the knife with a damp cloth between cuts.
Serving

Serve with Ponzu
Arrange the sushi rolls on a platter and drizzle with ponzu sauce. Serve with extra pickled jalapenos on the side.
