Preparation of Jade Pesto

    Make the Jade Pesto

    In a food processor, combine basil leaves, minced garlic, pine nuts, Parmesan cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth and set aside.

Cooking the Noodles and Vegetables

    Cook the Udon Noodles

    Bring a pot of water to a boil. Add udon noodles and cook according to package instructions until tender. Drain and rinse under cold water to stop cooking.

    Steam the Napa Cabbage

    In a steamer, add chopped Napa cabbage and steam for about 3-4 minutes until wilted. Remove and set aside.

Cooking the Protein

    Cook the Local Fish and Lup Cheong

    In a pan, lightly sauté the sliced lup cheong until browned. Add the local fish fillets and cook until fully cooked through, about 4-5 minutes per side, depending on thickness.

Assembly

    Combine and Serve

    In a large mixing bowl, combine the udon noodles, steamed Napa cabbage, and jade pesto. Toss to coat evenly. Serve the sautéed fish and lup cheong on top, drizzled with soy sauce and sesame oil.
