Lamb Preparation

Marinate Lamb

In a bowl, mix olive oil, salt, and crushed black peppercorns. Rub this mixture over the lamb loin chops and let marinate for at least 30 minutes.

Grill Lamb

Preheat the grill to medium-high heat. Grill the lamb chops for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove from grill and let rest.

Demi-Glace

Prepare Demi-Glace

In a saucepan, add cognac and bring to a simmer. Add the remaining black peppercorns and reduce by half. Add any lamb juices collected from resting and simmer until slightly thickened. Season with salt to taste.

Truffle Garlic Mashed Potatoes

Cook Potatoes

Peel and chop russet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

Mash Potatoes

In the same pot, add heavy cream, truffle oil, garlic (minced or roasted), and butter. Mash until smooth. Season with salt and black pepper to taste.

Roasted Vegetables

Roast Carrots and Green Beans

Preheat the oven to 400°F (200°C). Toss the baby carrots and green beans with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and caramelized.
