Corned Beef Preparation

    Brine the Corned Beef

    In a large pot, combine the water, pickling spices, and garlic. Bring to a boil, then let cool. Submerge the corned beef in the brine and refrigerate for at least 5 days.

    Cook the Corned Beef

    After brining, rinse the corned beef and place it in a pot with enough water to cover. Simmer for about 3 hours or until tender. Let it cool before slicing.

Sauerkraut Preparation

    Make the Sauerkraut

    Finely shred the cabbage and mix it with salt and caraway seeds. Pack it tightly into a fermentation jar and let it ferment at room temperature for 2-4 weeks.

    Combine the Dressing Ingredients

    In a bowl, whisk together the mayonnaise, ketchup, sweet pickle relish, vinegar, and garlic powder until well combined.

Sandwich Assembly

    Assemble the Reuben

    Spread butter on one side of each slice of rye bread. On the unbuttered side, layer sliced corned beef, sauerkraut, Swiss cheese, and a generous amount of 1000 Island dressing. Top with another slice of bread, buttered side out.

    Heat a skillet over medium heat. Grill each sandwich for about 4-5 minutes on each side, or until golden brown and the cheese is melted.
