Preparing the Short Ribs

    Marinate the Ribs

    In a bowl, mix honey, Dijon mustard, minced garlic, soy sauce, black pepper, and salt. Add short ribs and coat well. Cover and marinate in the refrigerator for at least 2 hours or overnight.

    Sear the Ribs

    Preheat oven to 300°F (150°C). In a large oven-safe pot, heat olive oil over medium-high heat. Remove ribs from marinade and sear on all sides until browned. Remove ribs and set aside.

    Cook the Ribs

    Deglaze the pot with beef stock, scraping up any browned bits. Return ribs to the pot, cover, and transfer to the oven. Cook for 3-4 hours or until tender.

Making Pommes Puree

    Cook the Potatoes

    In a large pot, cover the cubed potatoes with cold water and add salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.

    Mash and Combine

    Pass the potatoes through a ricer or mash until smooth. Stir in heavy cream and butter until creamy. Season with salt to taste.

Preparing the Demi-Glace

    Combine Ingredients

    In a saucepan, combine red wine, beef stock, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer until reduced by half. Season with salt to taste.
