Beef Short Ribs Preparation

    Sear the Ribs

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.

    Combine Ingredients

    Return the short ribs to the pot. Add honey, Dijon mustard, beef broth, and fresh thyme. Stir to combine.

    Braise

    Bring the mixture to a simmer, then cover and reduce the heat to low. Let it braise for 2.5 to 3 hours until the ribs are tender.

Whipped Potatoes Preparation

    Boil Potatoes

    In a large pot, add the chopped potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with salt and black pepper to taste.

Serving

    Plate the Dish

    Serve the braised beef short ribs on a plate with a generous scoop of whipped potatoes beside it. Drizzle some of the braising liquid over the ribs for added flavor.
