Prepare the Kiawe Smoked Onions

    Smoke the Onions

    Soak kiawe wood chips in water for 30 minutes. Slice the onions and toss them in olive oil, then place them in a smoker with the soaked wood chips and smoke for about 30-45 minutes until soft and flavorful.

Cook the Mushrooms

    Sauté the Mushrooms

    In a skillet over medium heat, melt butter. Add minced garlic and sauté until fragrant. Add Hamakua mushrooms, season with salt and pepper, and cook until tender and golden, about 5-7 minutes.

Prepare the Burger Patty

    Form and Cook the Patty

    In a bowl, mix ground beef with salt and pepper. Form into two patties. Grill or pan-fry on medium-high heat for about 4-5 minutes on each side, or until desired doneness. Place a slice of white cheddar on each patty during the last minute of cooking to melt.

Prepare Truffle Fries

    Cook the Fries

    Cook frozen fries according to package instructions. Drizzle with truffle oil and toss to coat.

Assemble the Burger

    Build the Bangah Burghah

    Toast the burger buns lightly. On the bottom bun, layer the smoked onions, the cheeseburger patty, and sautéed Hamakua mushrooms. Top with the other half of the bun and serve with truffle fries on the side.
