Method

Preparation

  1. 1

    Cook the Rice

In a saucepan, bring 4 cups of water to a boil. Add the white rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and water is absorbed.

  2. 2

    Prepare the Vegetables

While the rice is cooking, wash and chop the mixed garden vegetables into bite-sized pieces. You can also season them with a little olive oil, salt, and pepper if desired.

Grilling Salmon

  1. 3

    Preheat the Grill

Preheat your hibachi grill or outdoor grill to medium-high heat.

  2. 4

    Season the Salmon

Brush the salmon fillets with olive oil and season with salt, black pepper, and garlic powder.

  3. 5

    Grill the Salmon

Place the salmon fillets on the grill skin-side down. Grill for about 5-7 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Cooking Vegetables

  1. 6

    Grill the Vegetables

Using a grill basket or skewers, place the garden vegetables on the grill. Cook for about 4-5 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Serve the grilled salmon over a bed of white rice, with the grilled garden vegetables on the side. Drizzle ponzu sauce over the salmon for added flavor.
