Prepare the Hibachi Grilled Atlantic Salmon

Grill the Salmon
Preheat the hibachi grill. Remove salmon from marinade and grill for about 4-5 minutes on each side or until cooked to your preference. Garnish with chopped green onions.
Prepare the Somen

Cook the Somen
In a pot, bring water to a boil. Add salt and somen noodles. Cook according to package instructions (typically 3-4 minutes). Drain and rinse under cold water to stop cooking.

Serve the Somen
Toss the noodles with toasted sesame seeds and set aside.
Prepare the Namasu

Mix the Vegetables
In a bowl, combine julienned daikon and carrot. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Pour over the vegetables and let sit for at least 15 minutes.
Prepare the Citrus Ponzu

Combine the Ingredients
In a small bowl, mix soy sauce, yuzu juice (or lemon juice), mirin, and dashi stock. Stir well and set aside.
Finalize the Dish

Plate the Dish
On a serving plate, arrange the somen noodles, top with grilled salmon, and garnish with namasu. Drizzle citrus ponzu over the salmon.
