    Prepare the Sweet Potatoes

    Boil sweet potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

    Sauté the Market Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the market vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper to taste.

    Prepare the Fish

    In a bowl, mix the minced garlic, chopped fresh herbs, lemon juice, salt, and pepper. Rub this mixture all over the fish fillets.

    Sear the Fish

    In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Add the fish fillets and sear for about 3-4 minutes on each side, or until cooked through and golden brown.

    Serve

    On each plate, serve a portion of the sweet potatoes, topped with the sautéed market vegetables, and place the seared fish fillet on top. Drizzle with additional lemon olive oil if desired.
