Preparing the Herb Crusted Tofu

    Preheat and Prepare

    Preheat the oven to 400°F (200°C). Press the tofu to remove excess moisture and then cut into slices.

    Coat the Tofu

    In a bowl, mix olive oil, parsley, basil, garlic powder, salt, and black pepper. Coat the tofu slices with this mixture, then dip them into the panko breadcrumbs, ensuring they are well covered.

    Bake

    Place the coated tofu on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden and crispy.

    In a food processor, combine macadamia nuts, roasted red peppers, garlic, olive oil, red wine vinegar, salt, and black pepper. Blend until smooth.
