Method

Preparing the Ribeye

    Season the Ribeye

    Pat the ribeye steak dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Ribeye

    Heat olive oil in a skillet over medium-high heat. Add the ribeye and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Add Herbs

    During the last few minutes of cooking, add rosemary and thyme to the pan for additional flavor.

    Prepare Potatoes

    Preheat the oven to 400°F (200°C). Wash and halve the baby potatoes.

    Season and Roast

    In a bowl, toss the potatoes with olive oil, garlic powder, oregano, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until golden and tender.

    Sauté Vegetables

    In a separate pan, heat olive oil over medium heat. Add asparagus and zucchini, season with salt and pepper, and sauté for about 5-7 minutes until tender.

    Cook Peppers and Onions

    In another pan, heat olive oil over medium heat. Add shishito peppers and sliced red onion. Sauté for 5-7 minutes, then add balsamic vinegar and stir to combine. Cook for another 2-3 minutes.

Demi Glace

    Prepare Demi Glace

    In a small saucepan, bring beef stock to a simmer over medium heat. Reduce until thickened slightly. Stir in butter, salt, and pepper until smooth.
