Preparation of Hamachi Kama

    Prepare the Fish

    Preheat your grill or broiler to medium-high heat. Rinse the Hamachi Kama under cold water and pat dry with paper towels. Lightly season with salt and black pepper.

Making the Sauce

    Prepare the Sauce

    In a small saucepan, combine the soy sauce, mirin, sesame oil, rice vinegar, and sugar. Heat over medium heat until the sugar dissolves. Remove from heat and set aside.

Making the Oroshi

    Prepare the Oroshi

    In a bowl, mix the grated daikon radish, chopped green onions, and grated ginger. Set aside for serving.

Grilling the Fish

    Grill the Hamachi Kama

    Place the Hamachi Kama on the grill or under the broiler, skin-side down. Grill for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.

Serving

    Plate and Serve

    Place the grilled Hamachi Kama on a serving plate. Top with the grated oroshi and drizzle with the soy mirin sauce. Serve immediately.
