Method

Grilling the Salmon

    Prepare the Marinade

    In a bowl, mix olive oil, minced garlic, salt, pepper, lemon juice, soy sauce, and honey. Marinate the salmon fillets in this mixture for at least 30 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Grill the marinated salmon fillets for about 5-7 minutes on each side, or until cooked through and flaky. Sprinkle sesame seeds on top just before removing from the grill.

Preparing the Citrus Ponzu Sauce

    Mix the Ingredients

    In a bowl, combine soy sauce, citrus juice, rice vinegar, mirin, and dashi. Stir well to create a smooth sauce.

Making the Namasu

    Prepare the Vegetables

    In a bowl, combine julienned carrot and cucumber. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Pour over the vegetables and let marinate for at least 20 minutes.
