Prepare the Lamb

    Marinate the lamb

    In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, black pepper, and curry powder. Rub the mixture all over the half rack of lamb and let it marinate for at least 1 hour, or overnight in the fridge for best flavor.

    Grill the lamb

    Preheat the grill to medium-high heat. Grill the marinated half rack of lamb for 15-20 minutes, turning occasionally, until it reaches your desired level of doneness. Remove from grill and let it rest for 5 minutes before slicing.

Prepare the Curried Onion Mashed Potato

    Cook the potatoes

    In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and set aside.

    Sauté the onions

    In a skillet, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.

    Mash the potatoes

    In a bowl, combine the cooked potatoes, sautéed onions, heavy cream, curry powder, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Prepare the Roast Tomatoes

    Preheat the oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 15-20 minutes, until they are soft and slightly caramelized.

    On a serving plate, place a generous scoop of curried onion mashed potatoes, top with sliced grilled lamb, and garnish with roasted tomatoes. Drizzle with any natural juices from the lamb.
