Fish Preparation

    Marinate the Fish

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and chopped fresh herbs. Add the fish fillets and coat well. Allow to marinate for at least 30 minutes.

    Preheat the grill to medium-high heat. Place the marinated fish on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and flaky.

Roasted Vegetables Preparation

    Prepare the Vegetables

    Preheat the oven to 425°F (220°C). In a large mixing bowl, toss the zucchini, bell peppers, and red onion with olive oil, salt, black pepper, and dried oregano.

    Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

Rice Preparation

    In a saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and water is absorbed.
