Soufflé

Orange Compote

Method

Soufflé

  1. 1

    Prepare the Raspberry Base

In a blender, combine the frozen raspberries, sugar, and Grand Marnier. Blend until smooth. Strain through a fine mesh sieve to remove seeds, if desired.

  2. 2

    Whip the Cream

In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form. Gently fold the raspberry mixture into the whipped cream.

  3. 3

    Whip Egg Whites

In a clean bowl, whip the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the raspberry-cream mixture.

  4. 4

    Chill the Soufflé

Pour the mixture into ramekins or a large dish and freeze for at least 4 hours or until set.

Orange Compote

  1. 5

    Prepare the Oranges

Peel the oranges and segment them, removing any seeds. Set aside.

  2. 6

    Cook the Compote

In a saucepan, combine the orange segments, sugar, cinnamon stick, and Grand Marnier. Cook over medium heat for about 10 minutes until slightly thickened.

  3. 7

    Cool the Compote

Remove from heat and let cool. Discard the cinnamon stick before serving.
