Prepare the dough
In a large bowl, mix the flour and salt. Make a well in the center and add the eggs. Gradually incorporate the flour into the eggs until a dough forms. Knead for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Roll out the pasta
After resting, roll out the dough using a pasta machine to your desired thickness. Cut into tagliatelle strips and set aside dusted with flour.

Combine and serve
Cook the tagliatelle in boiling salted water until al dente. Drain and toss with the Bolognese sauce. Serve topped with meatballs, shaved Parmesan, and cured egg yolk. Garnish with fresh basil.
