    Prepare the Sweet Potatoes

    Preheat the oven to 400°F (200°C). Wash and pierce the Okinawan sweet potatoes with a fork. Bake in the oven for about 45 minutes or until tender.

    Make the Curry Sauce

    In a saucepan over medium heat, combine Thai red curry paste, coconut milk, fish sauce, and brown sugar. Simmer for about 10 minutes, stirring occasionally. Add fresh basil and lime juice, then remove from heat.

Grilling the Mahi Mahi

    Season the Fish

    In a bowl, mix olive oil, salt, black pepper, and lime juice. Brush the mixture onto both sides of the mahi mahi fillets.

    Grill

    Preheat the grill to medium-high heat. Grill the mahi mahi for about 4-5 minutes on each side or until the fish flakes easily with a fork.

Serving

    Plate the Dish

    Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half and place them on plates. Top each sweet potato half with grilled mahi mahi and drizzle with the Thai red curry sauce.

    Optional: Garnish with additional fresh basil leaves and lime wedges before serving.
