Method

Cooking the Fish

    Prepare the Fish

    Season the fish fillets with salt and pepper on both sides. Heat a skillet over medium heat and add a little olive oil. Cook the fish for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

    Toast the Buns

    While the fish is cooking, toast the brioche or sandwich buns in another skillet or oven until golden brown.

Making the Aioli

    Mix the Aioli

    In a small bowl, combine mayonnaise, chopped cilantro, capers, lemon juice, and minced garlic. Stir until well mixed and set aside.

Preparing the French Fries

    Bake the Fries

    Preheat the oven to 425°F (220°C). Toss the cut potatoes in olive oil, salt, and pepper. Spread them out on a baking sheet and bake for about 25-30 minutes, flipping halfway through, until golden and crispy.

Assembling the Sandwich

    Build the Sandwich

    On the bottom half of each toasted bun, place a lettuce leaf, followed by the cooked fish fillet, sliced tomato, and red onion. Spread a generous amount of lemon caper cilantro aioli on the top half of the bun and place it on top. Serve immediately with crispy French fries on the side.
