Filet Mignon Steak

    Prepare the Steak

    Season the filet mignon steaks with salt and crushed black peppercorns on both sides.

    Sear the Steak

    In a skillet over medium-high heat, melt 1 tablespoon of butter. Add the steaks and sear for about 4-5 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Make the Sauce

    Remove the steaks from the skillet and let them rest. In the same skillet, add cognac and scrape up any browned bits. Reduce the sauce for about 3-4 minutes. Stir in remaining butter.

Truffled Maui Potato Puree

    Cook the Potatoes

    Boil Maui potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Make the Puree

    Add heavy cream, truffle oil, salt, and butter to the potatoes. Mash until smooth and creamy.

Harissa Local Baby Carrots

    Prepare the Carrots

    Toss baby carrots with olive oil, harissa paste, and salt. Spread on a baking sheet.

    Roast the Carrots

    Roast in a preheated oven at 400°F (200°C) for 15-20 minutes until tender and slightly caramelized.
