House Made Fettuccine

Method

Filet Mignon Preparation

    Prepare the Rub

    In a small bowl, combine fennel seeds, salt, and black pepper. Rub this mixture all over the filet mignon.

    Cook the Filet

    Heat olive oil in a skillet over medium-high heat. Add the filet mignon and sear for 3-4 minutes on each side for medium-rare.

Caprese Preparation

    Combine Ingredients

    In a bowl, mix grape tomatoes, diced mozzarella, torn basil, and diced peppers. Drizzle with balsamic reduction and toss gently.

Fettuccine Preparation

    Make the Dough

    In a mixing bowl, combine flour and salt. Make a well in the center, add eggs and olive oil. Mix until a dough forms.

    Roll and Cut

    Knead the dough on a floured surface until smooth. Roll it out thinly and cut into fettuccine strips.

    Cook the Fettuccine

    Boil water in a pot, add salt, and cook the fettuccine for 2-3 minutes until al dente. Drain and set aside.

Green Charmula Preparation

    Blend the Ingredients

    In a blender, combine parsley, cilantro, garlic, lemon juice, olive oil, and salt. Blend until smooth.

Assembly

    Serve the Dish

    Plate the filet mignon alongside the fettuccine. Top the fettuccine with green charmula and serve the caprese salad on the side.
