Marinate the Chicken

    Prepare the Marinade

    In a bowl, mix together gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and rice wine. Add chicken thighs and ensure they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Cook the Chicken

    Cook the Chicken

    Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes on each side or until fully cooked and caramelized. Remove from the pan and let rest for a few minutes before slicing.

Prepare the Vegetables

    Sauté the Vegetables

    In the same skillet, add the mixed Asian vegetables and sauté until they are tender and vibrant in color, about 5-7 minutes.

    Prepare Cucumber Namasu

    In a small bowl, combine the sliced cucumber with rice vinegar and sugar. Let it sit for about 10 minutes to marinate.

Serve the Dish

    Plate the Dish

    Serve the sliced chicken over a bed of steamed rice, topped with sautéed vegetables. Drizzle with kabayaki sauce and sprinkle furikake on top. Serve with cucumber namasu on the side.
