Activate Yeast
In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine the flour, sugar, and salt. Add the yeast mixture, milk, and eggs. Mix until a dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Form it into a ball and place it in a greased bowl, covering it with a damp cloth. Let it rise in a warm area for 1 hour.

Shape Pastries
Cut the dough into triangles for croissants or rectangles for Danish pastries. For bagels, punch a hole in the center of a round piece of dough.
Baking

Final Rise
Place the shaped pastries on a baking sheet. Cover with a cloth and allow them to rise for 30 minutes.

Bake
Preheat the oven to 375°F (190°C). Bake the pastries for 15-20 minutes until golden brown. For bagels, boil them for 1 minute on each side before baking.

Serve
Allow to cool slightly before serving. Top with cream cheese, jam, or sprinkle with sesame or poppy seeds.
