Method
Prepare the Calamari

Clean and Dry
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a mixing bowl, combine the flour, cornstarch, salt, and black pepper.

Coat Calamari
Dip each calamari ring first in the wet mixture, then coat it in the dry mixture.
Fry the Calamari

Heat Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

Fry Calamari
Fry the coated calamari rings in batches for 2-3 minutes or until golden brown. Remove and drain on paper towels.
Prepare Tartar Sauce

Mix Ingredients
In a bowl, combine mayonnaise, yuzu kosho, lemon juice, salt, and pepper. Mix well.
Serve

Garnish and Serve
Drizzle truffle oil over the fried calamari, sprinkle with Parmesan cheese and crispy capers. Serve with yuzu kosho tartar sauce.
