Preparing the Filling

Cook and Prepare
In a large bowl, combine shredded chicken, julienned carrots, shredded cabbage, chopped green onion, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix well and set aside.
Assembling the Spring Rolls

Wrap the Filling
Take a spring roll wrapper and place it on a clean surface. Spoon 2 tablespoons of the filling onto the wrapper, fold the sides in, and roll it tightly from the bottom up. Seal the edge with a bit of beaten egg. Repeat with remaining wrappers and filling.
Frying the Spring Rolls

Fry the Rolls
In a deep frying pan, heat oil over medium-high heat. Once hot, fry the spring rolls in batches for about 3-4 minutes or until they are golden brown and crispy. Remove from oil and drain on paper towels.
Making the Pineapple Sweet & Sour Sauce

Cook the Sauce
In a saucepan, mix together pineapple juice, rice vinegar, brown sugar, ketchup, cornstarch, water, and salt. Cook over medium heat, stirring until the sauce thickens. Remove from heat and set aside.

Serve the crispy spring rolls hot with the pineapple sweet & sour sauce on the side for dipping.
