Preparation of Brussel Sprouts

    Prepare the Brussel Sprouts

    Preheat the oven to 425°F (220°C). Trim the ends of the Brussel sprouts and cut them in half. Toss them with olive oil, salt, and pepper in a bowl until evenly coated.

    Roast the Brussel Sprouts

    Spread the Brussel sprouts on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are crispy and golden brown, tossing halfway through.

Cooking Lup Cheong and Pepitas

    Cook the Lup Cheong

    While the Brussel sprouts are roasting, slice the lup cheong diagonally into thin pieces. In a skillet over medium heat, cook the sliced lup cheong for about 5-7 minutes, or until they are browned and crispy.

    Toast the Pepitas

    In the same skillet, add the pepitas and toast for 2-3 minutes until they are slightly browned and fragrant. Remove from heat and set aside.

    In a bowl, combine the mayonnaise, minced garlic, lemon juice, and chopped mint. Mix well and season with salt and pepper to taste.

    Once the Brussel sprouts are finished roasting, remove them from the oven and let them cool for a few minutes. Serve the crispy Brussel sprouts topped with the cooked lup cheong, toasted pepitas, and a generous drizzle of lemon mint aioli.
