Method

Crust Preparation

  1. 1

    Prepare the Crust

Preheat the oven to 350°F (175°C). Crush the chocolate sandwich cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.

Cheesecake Filling

  1. 2

    Make the Filling

In a mixing bowl, beat the cream cheese and sugar until smooth. Add sour cream, vanilla extract, and mix well. Add eggs one at a time, mixing until just combined. Fold in crushed cookies. Pour the filling into the cooled crust.

  2. 3

    Bake the Cheesecake

Bake the cheesecake in the preheated oven for 50-60 minutes or until the center is set. Let it cool to room temperature before refrigerating for at least 4 hours.

Matcha Whipped Topping

  1. 4

    Prepare the Topping

In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and matcha powder, continuing to whip until stiff peaks form.

Final Assembly

  1. 5

    Assemble the Cheesecake

Once the cheesecake has chilled, spread the matcha whipped topping evenly over the top. Optionally, garnish with additional crushed chocolate cookies.
