Roasted Molokai Sweet Potatoes

    Roast the Sweet Potatoes

    Preheat the oven to 400°F (200°C). Peel and chop the Molokai sweet potatoes into small cubes. In a mixing bowl, toss the sweet potatoes with olive oil, sea salt, black pepper, and fresh rosemary until well coated. Spread them out on a baking sheet in a single layer. Roast for 25-30 minutes or until golden and tender, stirring halfway through.

    Prepare the Dressing

    In a small bowl, whisk together lemon juice, honey, and chili flakes until combined. Set aside.

    Chill the Potatoes

    Once roasted, allow the sweet potatoes to cool at room temperature for 10-15 minutes. Once cooled, transfer them to the refrigerator to chill for at least 1 hour.

    Serve

    To serve, place the chilled roasted sweet potatoes on a platter, drizzle with the prepared dressing, and garnish with microgreens. Enjoy your refreshing cold bar creation!
