Pancakes

    Prepare the batter

    In a large bowl, whisk together gluten-free flour, baking powder, sugar, and salt. In another bowl, mix coconut milk, egg, and vanilla extract. Combine wet and dry ingredients until just mixed, then fold in shredded coconut and chopped macadamia nuts.

    Cook the pancakes

    Heat a skillet or griddle over medium heat and add butter. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with remaining batter.

Haupia Cream

    Make the haupia cream

    In a saucepan, mix coconut milk, cornstarch, and sugar. Cook over medium heat, stirring continuously until the mixture thickens. Remove from heat and stir in vanilla extract. Let it cool before using.

Brulee Bananas

    Prepare the brulee bananas

    Slice the bananas lengthwise. In a skillet, melt butter over medium heat, add the bananas, and sprinkle brown sugar on top. Cook until the sugar caramelizes and the bananas are golden brown, about 2-3 minutes.

    Stack pancakes on a plate, top with haupia cream, brulee bananas, and garnish with toasted coconut flakes.
