Chocolate Soufflé Preparation

Melt Chocolate
Preheat your oven to 375°F (190°C). In a heatproof bowl, melt the dark chocolate and unsalted butter together over a double boiler, stirring until smooth. Remove from heat and let cool slightly.

Whip Egg Whites
In a separate bowl, separate the egg whites from the yolks. Beat the egg whites until soft peaks form. Gradually add 50g of granulated sugar and continue to beat until stiff peaks form.

Raspberry Coulis Preparation

Make Coulis
In a small saucepan over medium heat, combine raspberries, sugar, and lemon juice. Cook until the raspberries break down and the mixture thickens slightly, about 10 minutes. Strain through a fine mesh sieve to remove seeds, if desired.

Serve the warm chocolate soufflés with a drizzle of raspberry coulis and a scoop of Lappert's Vanilla Ice Cream on the side.
