Method
Prepare Sushi Rice

Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season Rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour the mixture over the rice and gently fold to combine. Let it cool to room temperature.
Prepare Trio Kapakahi

Marinate Ahi Tuna
Cut the ahi tuna into small cubes. In a bowl, mix soy sauce, sesame oil, and green onions. Add the tuna and gently toss to coat. Let it marinate for about 10 minutes.

Assemble Bowl
In a serving bowl, add a scoop of the seasoned sushi rice. Top with marinated ahi tuna, sliced avocado, and a drizzle of the smoked soy wafu.
Prepare Smoked Soy Wafu

Mix Sauce
In a small bowl, whisk together smoked soy sauce, mirin, Dijon mustard, and honey until well combined.
