Preparing the Spring Rolls

Mix the Filling
In a large bowl, combine the shredded chicken, carrots, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Assemble the Spring Rolls
Place a spring roll wrapper on a clean surface. Add about 2 tablespoons of the filling near one corner of the wrapper. Fold the corner over the filling, then fold the sides in and roll tightly. Repeat with remaining wrappers and filling.

Fry the Spring Rolls
Heat oil in a deep pan over medium heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes each. Remove and drain on paper towels.
Making the Black Bean Dragon Sauce

Blend the Sauce Ingredients
In a blender, combine black beans, soy sauce, rice vinegar, honey, garlic, chili paste, sesame oil, and water. Blend until smooth. Adjust seasoning to taste.

Serve
Drizzle the black bean dragon sauce over the crispy spring rolls before serving or serve it on the side for dipping.
