Omelet Preparation

    Cook the Meats

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, add sliced Portuguese sausage and Spam, cooking until browned. Remove from heat and set aside.

    In a large bowl, crack the eggs and whisk until fully combined. For an egg white option, separate the egg whites and whisk them together.

    Add the cooked meats and lomi-lomi tomatoes to the egg mixture, stirring to combine.

    Heat a non-stick skillet over medium heat and add a little oil or butter. Pour in the egg and meat mixture, cook until the edges begin to set, then sprinkle the white cheddar cheese on top. Fold the omelet in half and cook for another minute or until the cheese melts.
