Butter Mochi

    Prepare the Batter

    Preheat your oven to 350°F (175°C). In a large bowl, mix together the glutinous rice flour, sugar, and baking powder. In another bowl, whisk together the coconut milk, milk, melted butter, and vanilla extract. Combine the wet and dry ingredients until well mixed.

    Divide the Batter

    Pour half of the batter into another bowl and mix in the cocoa powder to create the chocolate batter. Leave the other half as the classic batter.

    Bake

    Grease a 9x13 inch baking dish. Pour the classic batter into one half of the dish and the chocolate batter into the other half. Bake for about 45-50 minutes, or until the mochi is set and a toothpick comes out clean.

    Cool and Cut

    Allow the mochi to cool completely before cutting it into squares.

Candied Pecans

    Prepare the Pecans

    In a saucepan over medium heat, combine sugar, water, and a pinch of salt. Stir until the sugar dissolves. Add the pecans and cook, stirring constantly until the mixture thickens and coats the pecans.

    Cool and Serve

    Spread the candied pecans on parchment paper to cool before serving.

Serving

    Assemble the Dish

    Place a piece of classic and chocolate butter mochi on a plate. Top with candied pecans, drizzle with chocolate sauce, and add a scoop of vanilla ice cream on the side.
