Braised Short Ribs

    Sear the Ribs

    Preheat the oven to 300°F (150°C). In a large Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and black pepper, then sear them on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrots, and celery. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for another minute.

    Deglaze and Braise

    Pour in the red wine to deglaze the pot, scraping up any browned bits. Let it simmer for 2-3 minutes, then add beef broth, thyme, and bay leaves. Return the short ribs to the pot, cover, and transfer to the oven. Braise for 3 hours or until the meat is tender.

    Finish the Jus

    Once done, remove the ribs and strain the cooking liquid. Reduce the liquid over medium heat until thickened slightly. Adjust seasoning with salt and pepper.

Yukon Mash Potatoes

    Boil the Potatoes

    In a large pot, cover the peeled and quartered Yukon Gold potatoes with cold water. Add salt and bring to a boil. Cook until tender, about 20 minutes.

    Mash and Mix

    Drain the potatoes and return them to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with salt and black pepper to taste.
