Braised Short Ribs

    Prepare the Ribs

    Season the short ribs with salt and pepper. In a large pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrots, and celery. Cook until softened, about 5 minutes. Add garlic and cook for another minute.

    Braise the Ribs

    Return the short ribs to the pot. Add beef broth, soy sauce, and bay leaves. Bring to a boil, then reduce to a low simmer. Cover and braise for 2 to 3 hours, until the meat is tender.

    Caramelize Onions

    In a skillet, melt butter over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown, about 15-20 minutes.

    Add sliced mushrooms, salt, and pepper. Cook for an additional 10 minutes until mushrooms are tender and caramelized.

    Fry the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.

Assembly

    Place a serving of cooked rice on a plate. Top with braised short ribs, caramelized onions, mushrooms, and a sunny-side-up egg.
