Preparing the Chickpea Fillet

    Coat the chickpea fillets with blackening seasoning. Heat a skillet over medium-high heat and add a little oil. Cook the fillets for about 3-4 minutes on each side until they are blackened and crispy.

Making Mustard Peppered Mayo

    Mix the Ingredients

    In a bowl, combine mayonnaise, Dijon mustard, and cracked black pepper. Mix until smooth and set aside.

Assembling the Sandwich

    Build the Sandwich

    Toast the brioche buns lightly. Spread the mustard peppered mayo on both the top and bottom of the buns. Place a blackened chickpea fillet on the bottom bun, add lettuce, tomato slices, and house-made pickles. Top with the other half of the bun.
