Method

Bread Pudding Preparation

  1. 1

    Mix Ingredients

In a large mixing bowl, mash the ripe bananas. Add the day-old bread cubes and mix well. In another bowl, whisk together the milk, heavy cream, eggs, sugar, vanilla extract, cinnamon, and salt. Pour this mixture over the bread and bananas and let it soak for 30 minutes.

  2. 2

    Bake

Preheat the oven to 350°F (175°C). Transfer the mixture into a greased baking dish and bake for 45-50 minutes, or until set and golden brown on top.

Haupia Sauce Preparation

  1. 3

    Combine Ingredients

In a saucepan, whisk together coconut milk, cornstarch, sugar, and water. Heat over medium heat, stirring constantly until the mixture thickens and bubbles.

  2. 4

    Finish Sauce

Remove from heat and stir in vanilla extract. Set aside to cool.

Caramel Preparation

  1. 5

    Make Caramel

In a saucepan, combine sugar and water. Cook over medium heat until it turns golden brown, swirling occasionally. Be careful not to burn it.

  2. 6

    Cool

Once the desired color is reached, remove from heat and let it cool slightly before using.
