    Prepare the Banana Bread

    Preheat your oven to 350°F (175°C). In a large bowl, mash the ripe bananas. Add melted butter, sugar, eggs, and vanilla extract, and mix well. In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Pour the batter into a greased loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.

    Make the Vanilla Bean Foster

    In a skillet over medium heat, melt the butter. Stir in the brown sugar and vanilla bean. Once the sugar has dissolved, add the sliced bananas. Cook for 2-3 minutes until the bananas are caramelized. Carefully add the dark rum and ignite it (if desired) to flambé. Allow the alcohol to cook off for a minute and then remove from heat.

Coconut Gelato

    Prepare the Coconut Gelato

    In a mixing bowl, combine coconut milk, heavy cream, sugar, vanilla extract, and a pinch of salt. Mix until the sugar is dissolved. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze for at least 4 hours.

    Assemble the Dish

    Slice the baked banana bread and dip each slice in the Vanilla Bean Foster sauce. Serve warm topped with a scoop of coconut gelato.
