Method
Preparing the Filet Mignon

Wrap the Filet
Wrap each filet mignon with 2 slices of bacon and secure with toothpicks. Season with salt and black pepper on both sides.

Sear the Filet
In a hot skillet over medium-high heat, sear the bacon-wrapped filets for about 3-4 minutes per side until bacon is crispy. Transfer to an oven-safe dish.

Bake in a preheated oven at 400°F (200°C) for about 10-12 minutes for medium-rare, or until desired doneness.
Making the Potato Puree

Puree the Potatoes
In a bowl, combine the drained potatoes with heavy cream and butter. Use a potato masher or blender to puree until smooth. Adjust seasoning with salt.

Prepare the Sauce
In the same skillet used for the filets, add beef broth and crushed peppercorns. Bring to a simmer. Mix cornstarch with a little water to create a slurry, then add to the sauce to thicken. Stir in heavy cream and heat through.
