Rack of Lamb Preparation

    Marinate the Rack of Lamb

    In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and pepper. Rub the mixture all over the rack of lamb. Cover and marinate for at least 1 hour in the refrigerator.

    Roasting the Rack of Lamb

    Preheat the oven to 400°F (200°C). Place the marinated rack of lamb on a roasting pan and roast for about 25-30 minutes for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

    Prepare the Brussels Sprouts

    In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.

    Roasting the Brussels Sprouts

    Roast in the preheated oven (same as lamb) for about 20-25 minutes, or until crispy and golden brown. In the last 5 minutes of cooking, sprinkle the grated Parmesan cheese on top.

Hawaiian Coffee Porter Demi-Glace Preparation

    Make the Demi-Glace

    In a saucepan, melt butter over medium heat. Add chopped shallots and sauté until translucent. Pour in the Hawaiian coffee porter and beef stock. Bring to a boil, then reduce to a simmer until the sauce thickens (about 15-20 minutes). Season with salt and pepper to taste.
